Wild game segments have been a popular part of our program for many years. ABO Wild Cookin' Host Chef Jerri Myers is constantly receiving requests from viewers for recipes featured on the show, so here's a favorite for you to try!
INGREDIENTS
- 6 1/2" Venison Steaks
- 2 Limes, Juiced
- 4 - 6 Garlic Cloves, Chopped
- 3 Tbsp. Fresh Rosemary
- (or 1 1/2 Tbsp. Dried Rosemary, Chopped)
- 1 1/2 Tbsp. Fresh Thyme, optional
- 1/2 Cup Olive Oil (or more if needed)
- 1 tsp. Kosher Salt
- 1/2 tsp. Fresh Cracked Pepper
PREPARATION
- Place steaks in a glass casserole dish or zip top bag.
- olive oil and lime juice over venison steaks.
- Sprinkle garlic, thyme, and rosemary over steaks.
- Add salt and pepper evenly over all.
- Press the ingredients into steak with fingers.
- Marinate steaks 4 - 6 hours for tenderness and flavor, turning 3 to 4 times.
- At grill, place steaks over medium hot coals and cook 4 - 5 minutes on one side only.
- Turn steaks over and finish grilling to desired doneness (Medium rare will be much more flavorful and tender.)
- Rest the meat on a warm platter an barely cover with foil for 3 - 5 minutes. Remember, the meat will continue to cook even after being taken off the fire, so don't overcook them.
- Slice across the grain and serve with a side dish and salad.
Serve skewers on top on top of wild rice with glazed figs and green beans on the side. Garnish with an orange slice and rosemary sprigs.

Chef Jerri Keller Myers is currently the lead cooking instructor at Viking Cooking School in Memphis, Tennessee. She is also the chef on the television series "AdventureBound Outdoors". For thirteen years, Chef Jerri was the chef at the premiere "Greenbriar Hunting Club" just north of Stuttgart, Arkansas where all her dinner meals included hickory smoked meat, fish or wild game. She, also, has been a guest chef at Harrods in London, England and also, a guest chef at The Ritz Hotel, in Paris, France as well as cooking and filming in a beautiful castle in Scotland. Last year, Chef Jerri filmed several cooking segments for the national television show, "P.Allen Smith Garden Show". She also does speaking engagements and cooking demonstrations for local clubs, as well as cooking demonstrations and interview for local television. Chef Jerri resides in Memphis, Tennessee with her husband Chuck. She enjoys her three children, Landon, Kristen and Brittany that also live in Memphis.
